Air Fryer Beef Curry Poutine

Paying homage to my Canadian roots here is a twist on a Canadian Classic you've got to try!

Serves 4

Ingredients:

  • 1 1/3 Russet Potato (large, cut into fries)

  • 2 tbsps Extra Virgin Olive Oil (divided)

  • 1/3 cup Red Onion (thinly sliced)

  • 10 2/3 ozs Top Sirloin Steak

  • Sea Salt & Black Pepper (to taste)

  • 2/3 cup Beef Broth

  • 1 1/3 tbsps Miso Paste

  • 1 1/3 tsps Curry Powder

  • 1 tbsp Arrowroot Powder

  • 8 ozs Cheese Curds

  • 1/3 cup Cilantro (optional, chopped)

Directions:

  1. Preheat the air fryer to 380°F (195°C).

  2. Toss the potatoes in 1/3 of the oil and cook in the air fryer for 15 to 20 minutes, tossing a few times, or until browned and crispy.

  3. Meanwhile, heat the remaining oil in a pan over medium heat. Add the red onion and cook for two minutes. Add the steaks and cover with a lid. Cook for 10 to 12 minutes, flip, and continue to cook for another 10 to 12 minutes or until your desired doneness. Stir the onions as needed. Season with salt and pepper to taste, then chop into bite-sized pieces.

  4. While the fries and steak are cooking, make the gravy. Add the broth, miso paste, curry powder, arrowroot powder, salt, and pepper to a blender. Blend on high for 15 to 30 seconds, then transfer to a saucepan over medium heat on the stove. Whisk frequently for five to 10 minutes, until thickened.

  5. Divide the fries, steak, onions, and cheese curds evenly between bowls. Pour the gravy on top and season with cilantro. Enjoy!
